Just seven weeks after reopening in June 2021, Pietro's cuisine was awarded 13 points by Gault&Millau and is currently one of the 800 best restaurants in Switzerland. Every dish on the menu tells its own story. Pietro's recipes are a tribute to his Italian origins, the Valais and Riederfurka. All creations are based on ingredients from sustainable and mostly organic sources, so it is only natural that Riederfurka is committed to "Slow Food".
While you choose "à la carte" over lunch, in the evening you are welcomed by the host to the exclusive "Chef's Table" - on request.
Pietro Catalano unfolds his skills in the "Chef's Table" with palpable passion. The award-winning chef and his team take guests on a taste journey through the defining elements of the Aletsch Arena. With infusion, salts and fermentation, the chefs stage associations with the glacial ice of the Aletsch Glacier. Through wood and fire, unique roasts and smoked notes of select ingredients are celebrated. The 8-course menu remains a surprise for the guest, but this much can be revealed - the dessert is called "My Sweet Caviar". The "Chef's Table" is definitely a gourmet experience.
The 37-year-old Pietro Catalano from Zug is a trained musician and has self-directed his extraordinary cooking craft. The self-taught chef has been loyal to the Valais for some time now, and the half-Italian ran "Heidi's Hut" on the Fiescheralp for three seasons. Since June 2021, he has made his mark on the Riederfurka restaurant, which belongs to ALETSCH BAHNEN SA.
